I travel to Italy often and in my experience the best way to handle exchange is to get a credit card that doesn’t charge a premium for international transactions (MasterCard and Visa are more accepted than American Express in Italy ) and use that as much as possible.
For cash - take your ATM card and withdraw in Italy but choose to withdraw in € not $AUD and you should be charged the bank interchange rate which will be lower than the bank exchange rate!
