This might be a stretch, but a visit to Ravello above the town of Amalfi is absolutely beautiful. We took the bus from Sorrento to Amalfi and then a connecting bus up to Ravello (~ 30mins). From the bus stop it took us another 25 mins to walk/find Villa Cimbrone where you can pay a nominal fee (7euros back in 2017) to walk the magnificent gardens that included the Terrace of Infinity. I could have spent a whole afternoon there but our party had to rush back to Amalfi to catch the bus back to Sorrento (limited schedule).

We went on tour from Rome to Pompeii, through Naples (just to have a water view of Capri, etc) with a guide. Its was a lot of walking, but great with the guide. Long day 7 am to 6 pm on a bus to and from.
Am planning a similar trip. Using one day for Pompeii and Herculaneum, the other for a tour of the Amalfi coast via tour bus (see Trip Advisor). The former are great if you are into history. But so is Capri for that matter. That is where Emperor Tiberius spent the last six years of his reign. Caligula spent those last years in Tiberius' palace until he became emperor on the death of Tiberius. Hard to beat either, but I would take Pompeii and Herculaneum. A better view of an entire town and how they lived at the time of the eruption.
I suggest touring the Amalfi coast. You can visit many(most) of the towns by taking the ferry. A day pass is available and you can get on and off at will. Pompeii is worth a dedicated 2 days and the travel time there and back to Sorrento you can spend in a cafe enjoying a Negroni and the local color. Have a lovely time!
