Check out The Man in Seat 61 website at Seat61.com46 and look for train travel between European cities.  This guy has ALL the info and tips!  There is no direct train from Florence to Nice, France.   It will take three trains to get you to Nice if you want to travel a good part of the day.  We decided to break up the travel and booked the Florence to Genoa route (there are five trains scheduled for our June 23 departure as well as your June 12). We are booked on the 10:55am  train leaving Firenze SM Novella to Milano Centrale.  We have a short 20min. connection from Milano Centrale to Genova P. Principe.  Next day we will train from Genova to Ventimiglia and catch the last leg from Ventimiglia to Nice on the French local TER (SNCF) train booked through Trainline.com5. As per the guy in seat 61 you can do Florence to Milan / Milan to Ventimiglia / Ventimiglia to Nice.  Good luck on your routing.
